Vegan Snack Ideas
If you’re wanting healthy vegan snacks that you have between meals or as a treat. Then why not try these easy recipes out.
Date and Walnut Bites
Ingredients: 3 walnut halves, 3 pitted medjool dates, ground cinnamon (to taste).
Method: Cut each walnut into slices, as well as the dates. Place a walnut on top of the date and sprinkle with cinnamon.
Roasted vegetable hummus with dippers
Ingredients: 350g of roasted vegetables, 400g can of chickpeas (drained), 1 garlic clove, 1 tbsp of olive oil, juice of ½ lemon, 2 carrots cut into batons, 2 wholemeal pittas, 2 celery sticks.
Method: Tip the vegetables, chickpeas, lemon juice, garlic clove, and olive oil into a food processor with seasoning and whizz it up. Put the hummus in a bowl and serve with the pittas, celery, and carrots.
Aubergine and Chickpea Bites
Ingredients: 3 large aubergines (halved), 2 garlic gloves, 400g of chickpeas, olive oil, 2tbsp of flour, ½ lemon juice and zest, breadcrumbs.
Method: Heat the oven to 200C. Drizzle the oil on the aubergine halves and put them into a roasting tin with garlic. Season, then roast for 40 minutes until the aubergine is tender. Spoon the aubergine flesh into a bowl along with the garlic. Add the chickpeas, flour, lemon zest and juice and mix together. Shape the mixture into 20 balls and put them on a tray lined with parchment. Leave them to chill for 30 minutes. Heat the oven to 180C. Roll the balls in breadcrumbs and place in the oven for 20 minutes. Serve with dairy-free yoghurt.
Ingredients: 2 bananas, 200g of frozen berries
Method: Add the bananas and berries into a blender, blitz and serve as a delicious pudding!
Banana and Walnut Loaf Cake
Ingredients: 50g of coconut oil or sunflower oil, 200g of self-raising flour, 25g of ground almonds, 1 tsp of baking powder, 75g of muscovado sugar, 4 dates chopped, 4 ripe bananas, 3 tbsp of soya milk, 75g of walnut pieces.
Method: Heat the oven to 200C. Line the loaf tin with parchment paper. Mix the flour, almonds, sugar and dates together. Beat together the bananas, soya milk, and oil, then add to the flour mixture. Fold the walnuts into the mixture. Place the mixture into the tin and bake for an hour and serve when cool.
